Wow. A whole year between posts? You might expect a reason, but you aren’t getting one.
Have things happened? Sure. Trips and food, food and trips. Even more Malave fun!
BBQ smokers purchased and used to cook many pounds of ribs; construction projects started (yeah – started only, still…); Chuy got a makeover; crazy Malave-centric wireless networking projects; trips to San Antonio, Kemah, New Orleans (find yourself a Buc-ees); philosophies on life discovered (“Next in line… For here or to geaux?”); new work projects and old ones that won’t die. There’s the short list.
But – that’s not what this is about. I have found a new friend. Paco discovered his name for me. It is “Bomb Dog”.
Respect the “Bomb Dog”, he doesn’t bite… AFAIK.
Oh yeah – you think he looks crazy there? No…
Oh yeah – that’s what I am talking about…

I’m beginning to think that the boys are not talking about Boston is because they fear the wrath of the traffic.
Okay… so… warning… when you have to make a girl who grew up in the burbs of a metro area… and scream because of all the crazy drivers and non-existant on/off ramps…
*sigh*
Boston. Good seafood. Good Italian food. Scary drivers.
But really… the driving was all that bad!

chuy. it’s time to travel.
paco and juan are in Boston to learn about computers. we take computers and use magic on them to put them in a magic box.
people in Boston have been nice to paco and juan. we ate good food. we walked around the freedom trail. a funny man with a hat told us about boston. he was a happy and angry little man.

Today Juan and I got to eat mofongo. We know this guy at work, Dr. Cesar Malave. I saw mofongo at work and I said the magic word around Dr. Malave. He says to me “Hey! Mofongo! Man you gonna gain like 2000 pounds eating this stuff. It’s really good. Let’s make it at my place”. I told Juan, Hey Juan we are going to Malave’s to eat mofongo. Juan looked at Chuy and was wondering what he got into.
So Malave made the mofongo and some good drinks. Juan was almost not able to get Chuy home. The burro was almost left behind. Juan and I made a smoked pork shoulder to go along with the mofongo. It was an amazing meal. I also made some bbq sauce to go with it all.
If you can get past the straight up pork fat in the way Malave makes his mofongo, then it truly is delicious. Here is the recipe for Malave’s Mofongo:
Ingredients:
You will need something to crush the garlic and the plantains together along with the pork fat or bacon. You will also need something to deep fry with, like a fry daddy or a large pot that you would fry stuff in, like french fries.
So we peeled the plantains. Chop the plantains into chunks. The chunks should be somewhat equal to be able to deep fry evenly.
We then prepared the deep fry pot. Heat up the oil or lard, whatever you choose to deep fry in to 350. In another pan or pot cook up the pork fat or bacon. Save the grease or oil or love juice that it makes in the pot to use later when you mash up the mofongo.
We fried up the plantains. Malave says that you know they are ready when you tap them and they make a crunchy sound. So we went with that. Fry until you tap them and they make a crunchy sound. Use a spider or a type of strainer to get the fried plantains out and put them in a pan and keep them warm until you are ready to smash them.
Smash up the fried plantains, a garlic clove or two, the pork fat or bacon, a little olive oil. Smash it up good. Then eat.
You can top this with something like chicken broth to keep it moist if you like it that way. Maybe add some shrimp or pork to it for even more yummy food. We ate it with beans and rice that he also made. We were completely bloated after the drinks and food we ate.
